11. Phirni (Blancmange)
Ingredients Amount
Rice 2 tsp (10g)
Milk 1 tea cup (150ml)
Water 1 tea cup (150ml)
Cardamom (Powder) 1 (Optional)
Almonds 1
Sugar * 3 tsp (15g)
 
Method
 
  Soak rice for about an hour in little water. Drain and grind with 2-3 tbsp of water to a very smooth paste.
  Mix rice paste with ½ cup milk and make it thinner. Keep aside.
  Mix the rice paste with all the milk and water in a clean, heavy bottomed pan. Cook on medium heat, stirring continuously and get a mixture of creamy Consistency.
  Add sugar and cardamom powder and mix well for a few seconds.
  Pour the mixture in to 4 silver, glass or earthen bowls. Chill. Decorate each bowl With few shredded almonds or rose petals.
