9. Kesar waale mitthe chaawal (Sweet Rice) |

Rice (must be soaked for 1 hour) |
1 katori (100g) |
Sunflower oil or Ghee |

Method |

Make sugar syrup by boiling 3/4th cup water and 1 katori sugar in a small pan. Stir in
between. Remove from fire as soon as syrup boils. Keep aside. Add kesar. |

Heat ghee in a big heavy bottomed pan. Reduce heat. |
|
Add chhoti illaichi and laung. Stir fry for a few seconds till illaichi changes colour. |
|
Add grated coconut (Optional) and stir for 5 minutes. |

To prepare rice, discard water from soaked rice and cook. Mix gently so that the rice
grains do not break. Add 1½ cups of water. Boil. |
|
Reduce flame. Keep a tawa under the pan of rice, simmer gas. Cook for about 10
minutes till the water gets absorbed. |
|
Add the kesar waala sugar syrup.mix lightly with a fork. |
|
Cover and cook further on low heat till rice are done and the syrup gets absorbed. |
|
|
Variation – You may use boiled mashed potatoes in place of bottle gourd (Dudhi) to
prepare potato halwa. |
