| 2. Pineapple Halwa (pineapple semolina pudding) |

| wheat, semolina (Rava / Sooji) |
1/4th katori (30g) |
| Pineapple (Ananas) |
1 thin clean slice (25g) |
| Sugar* |
4 tsp (20g) |
| Cardamom |
1 crushed |
| Ghee |
2tsp (10g) |
| Water |
1 tea cup (150ml) |

| Method |

Cut pineapple in to very small pieces or make pulp of it (without adding water). |

Roast sooji semolina till its light brown and gives a nice aroma. |

Fry pineapple pulp in ghee till it becomes translucent and starts leaving edges. Add
sooji, mix it properly. |

Make sugar syrup and add it to the sooji. Mix well. Cook the mixture stirring it
constantly till it stops sticking to the sides of the vessel. |

Add powdered cardamom mix well. Serve hot by setting in moulds or katori. |

| Variation – You may prepare papaya halwa by using papaya in place of pineapple. |
