Boil potato, remove skin and mash it. |

Take a pan, add oil and mash potato. Cook till aroma of potato is emitted. |

Now add sugar and powdered cardamom. |

Cook till the mixture leaves the side of the pan, remove from fire and cool it. |

To make outer covering, boil water, add rice powder stir well. Cover vessel to form
steam. Cook till rice forms a thick paste. Take off fire. When slightly cool, knead it in to
dough. |

Divided dough in to small equal 4 portions and rolled out into small thin chapattis. |

Place small portion of potato mixture on each chapatti. Pick up the sides in to loose
folds like frill and keep collecting each fold in the center, to give a flattened ball (like a
kachorie) |

Place the modaks in a greased steamer and steam it in pressure cooker with 2 cups of
water without the whistle for 3-4 minutes. |

Remove it from steamer carefully. Serve it hot |

| Variation-
You may use pumpkin ,tapioca or bottle gourd in place of potato. |
