12. Thumbprint Cookies

½ katori (75 g) |
Milk |
3 tbsp (45 ml) |
Corn flour |
1/4th katori (24 g) |
White flour |
1¼ th cup (120 g) |
Apple or pineapple or papaya Jam |

Vanilla essence |
2-3 drops |
Method |
- Preheat oven to 375F.
- Cream together butter, sugar. Beat in vanilla, milk and corn flour. Stir
in flour until just combined.
- Divide dough in 24 equal portions.
- Roll into 1 inch balls.
- Place on baking sheet and make a shallow indentation with your
thumb.
- Fill indentation with a bit of jam.
- Bake cookies for 12-13 minutes, until cookies just start to brown.Cool on a wire rack. Makes about 24 cookies.

Variation - You can roll into 1 inch balls and roll in coarse sugar before making indention in it.
Then fill this indention with jam. |
