13. Crispy Colocasia Veg (Arvi Subzi)
Ingredients Amount
Colocasia ¼ th kg (250 g)
Rice flakes roasted ½ katori (30 g)
Dry red chilies(Roasted) 2
Asafetida A pinch
Turmeric powder ½ tsp
Mustard seeds 1 tsp
Oil 1 tbsp (15 ml)
Salt As per doctor’s recommendation
 
 
Method
  Wash the Colocasia thoroughly. Pressure cook in a vessel over water for 2-3 whistles. Make sure the Colocasia is cooked but not overcooked.
  Remove and peel the Colocasia. Cut into ¼ th thick roundels. Keep aside.
  Grind together the roasted rice flake, roasted red chilies, asafetida and turmeric powder to fine powder.
  Heat oil in a pan and add the cumin seeds in it.
  When they crackle, add the Colocasia, salt and the ground powder. Stir fry till mixture is crisp. Serve hot.
 
Variation – You can make potatoes in similar way.
