11. Ridge Gourd Veg
Ingredients Amount
Ridge gourds 250 g
Onions(Finely chopped) 1 medium size (60 g)
Tomato (Grated) ½ medium size (25 g)
Green chillies (Chopped) 1-2
Turmeric A pinch
Coriander leaves (Optional) A few sprigs for garnishing
Salt As per doctor’s recommendation
Oil 1 tbsp (15 ml)
Make a fine paste of the following ingredients
Mustard seed ¼ th tsp (1 g)
Cumin seed ¼ th tsp (1 g)
Sesame seeds 2 tsp (5 g)
Dry red chillies 1-2
Garlic 4 cloves
 
Method
  With a potato peeler lightly skin the gourd of all hard veins. Slice into fairly thick pieces.
  Heat the oil and fry the onion till golden brown and soft. Add the green chillies and fry for another minute. Add the tomato and turmeric and cook till tomato becomes pulpy. Add the paste and fry well till the oil separates from the mixture.
  Add in the Ridge gourds with a sprinkle of water. Cover tightly and cook till soft. If you need to, add a few tablespoons of water and mix well to make a very slight bit of gravy.
  Finish with a sprinkle of Coriander leaves and salt.
 
Variation - You can prepare ash gourd, bottle gourd, Snake gourd, red pumpkin, tondli vegetable in same manner.
