27. Ash Gourd Bhurta
Ingredients Amount
Ash gourd 500 g
Oil 15 ml
Onions 200 g
Green chillies 4
Lime Juice 1 tsp
Coriander leaves A few sprigs
Salt to taste  
 
Method
  Peel and cut gourd into cubes. Cook over a slow flame, adding just enough water to cook dry, till tender. Mash gourd.
  Heat oil. Add chopped onions and green chillies and saute. Add gourd and salt and mix well. Fry for 5minutes more.
  Remove pan from fire. Add lime juice and chopped coriander leaves.
  N.B. If desired, a little roasted cumin powder could be added in which case add this before adding the lime juice.
