8. Snake Gourd Veg
Ingredients Amount
Snake gourd 250 g
Oil 2 tbsp (30 ml)
Potatoes* 1 medium size (50 g)
Green chilies (Chopped) 1-2
Turmeric A pinch
Chili powder 1 tsp (2 g)
Coriander powder 1 tsp (2 g)
Dry mango powder 1 tsp (2 g)
Garam masala powder ½ tsp (1 g)
Gram flour(Besan) 1 tbsp (6 g)
Coriander leaves (Optional) A few sprigs for garnishing

Salt As per doctor’s recommendation
Water ¼ th cup
 
Method
  Wash and cut snake gourd into 5cm by 2.5cm pieces. Parboil with a little water and discard water. Keep it aside. Peel and dice potatoes.
  Heat oil in a pan; add the potatoes, Snake gourd, salt and all the other spices, except gram flour and chopped coriander.
  Sauté all the ingredients and simmer the vegetables adding ¼ cup of water. Bring the heat to medium, cover the pan, stirring occasionally until cooked.
  Add the gram flour and simmer for another 5-7 minutes.
  Garnish with chopped coriander and serve hot with phulka’s.
 
Variation -
  You can prepare ash gourd, bottle gourd, Snake gourd, capsicum vegetable in same manner.
  Diabetics can use onions in place of potatoes.
