9. Quick Mixed Veg (Vegetable Curry) |

Method |

Wash all vegetables. Peel and cut bottle gourds in to one and a half centimeter size pieces. Separate cauliflower in to small florets. Cut cabbage, capsicum in to one centimeter size pieces. Peel and cut Knol khol into one centimeter pieces and keep them soaked in water. String and cut French beans into one and half centimeter pieces. Cut tomatoes in to eight pieces. |

Heat oil in a pressure cooker, add bay leaf and black pepper stir-fry briefly. Add all vegetables, roasted cumin powder, cinnamon and salt. Mix well. Stir fry for two to three minutes. Add water. |

Cover and cook under pressure for five to six minutes (Remove from heat). |
|
Serve immediately with plain rice or roti. |
|
Variation - Non diabetic patient’s can make use of potatoes. |
