| Gram flour(Besan) |

| Method |

Wash and cut snake gourd into 5cm by 2.5cm pieces. Parboil with a little water and discard water. Keep it aside. Peel and dice potatoes. |

Heat oil in a pan; add the potatoes, Snake gourd, salt and all the other spices, except gram flour and chopped coriander. |

Sauté all the ingredients and simmer the vegetables adding ¼ cup of water. Bring the heat to medium, cover the pan, stirring occasionally until cooked. |

Add the gram flour and simmer for another 5-7 minutes. |
| |
Garnish with chopped coriander and serve hot with phulka’s. |

You can prepare ash gourd, bottle gourd, Snake gourd, capsicum vegetable in same manner. |

Diabetics can use onions in place of potatoes. |
