Method |

String, wash and chop French beans finely. Boil French beans in water for 5 minutes and discard water. Keep boiled French bean aside. Peel, wash onions and chop finely. Remove steam and chop green Chili and garlic. Wash and pat dry curry leaves. |

Heat oil in pan, add mustard seeds and curry leaves. When mustard seeds begin to crackle add chopped onions, garlic and green chili. Stir for a few minute. |
|
Add chopped French beans and permitted amount of salt. Cook covered on a low heat for five to eight minutes or till beans are done but still little crunchy. |

Variation |

Non diabetics can add diced boiled potatoes to prepare French bean potato vegetable. |
|
You can prepare cabbage, red pumpkin, cauliflower, snack gourd, bottle gourd and ash gourd in same way. |
