Skillet Cookies
- 2 tbsp. butter
- 1 c. pitted dates, cut into sm. pieces
- 1 c. sugar
- 2 eggs
- 3 c. Rice Crispier cereal
- 1/2 c. chopped nuts
- Flaked coconut

Preheat skillet, uncovered, at 250 degrees. Melt butter. Add dates,
sugar and eggs. Continue cooking, stirring constantly, until mixture
forms a ball (between 15-18 minutes). Turn off heat. Cool slightly. Stir
in Rice Krispies and nuts. Combine thoroughly.
Divide mixture into 2 equal portions, shape into a roll, 2 inches in
diameter. Roll in flaked coconut. Wrap in waxed paper. Refrigerate.
To serve, cut into slices about 1/4 inch thick. Makes about 5 dozen
cookies.
