2. Pineapple Halwa (pineapple semolina pudding)
Ingredients Amount
wheat, semolina (Rava / Sooji) 1/4th katori (30g)
Pineapple (Ananas) 1 thin clean slice (25g)
Sugar* 4 tsp (20g)
Cardamom 1 crushed
Ghee 2tsp (10g)
Water 1 tea cup (150ml)
 
Method
 
  Cut pineapple in to very small pieces or make pulp of it (without adding water).
  Roast sooji semolina till its light brown and gives a nice aroma.
  Fry pineapple pulp in ghee till it becomes translucent and starts leaving edges. Add sooji, mix it properly.
  Make sugar syrup and add it to the sooji. Mix well. Cook the mixture stirring it constantly till it stops sticking to the sides of the vessel.
  Add powdered cardamom mix well. Serve hot by setting in moulds or katori.
   
Variation – You may prepare papaya halwa by using papaya in place of pineapple.
Serving: 1-2 portions (depending on serving size)

  Suitable for renal failure patients, hypertensive with or without edema.
  Unsuitable for patient with Diabetes
* In place of sugar, Diabetics can use ‘Sugar free’ but add it after cooking is done, do not heat after adding ‘Sugar free’.
